This young and fresh red wine blend of the local Sangiovese Gentile or Prugnolo, as it’s known in Montepulciano, and native Mammolo grape varietals has retained all of the freshness and fruitiness of a wine unaltered by oak aging. Mammolo is also the Italian term for violets and this wine expresses distinct floral aromas, particularly of violets.

Vineyards: The vineyards in Cervognano are cultivated according to certified organic methods
Soil: limestone soils with some sand
Yield: 40HL/ha
Harvest: manual harvest into crates followed by a selection on sorting tables
Fermentation: after destemming, only a soft pressing of the grapes takes place before temperature controlled fermentation in stainless steel tanks using only indigenous yeasts. Frequent pump overs are effected manually.
Ageing: 6 months of aging in cement vats where the malolactic fermentation takes place
Refining: short bottle refinement before market release
