The “Maturato” or Italian word for ripened was given to name this wine made from grapes that were left to fully ripen on the vine, only possible in the best vintages. With a late October harvest, the very particular characteristics of the varietal are enhanced. Pulcinculo is part of the Grachetto family of whites but has its distinct, intense aromas, a compact and long-lasting flavor and unmistakable marks of toasted almonds. A very memorable, seasoned wine which is best opened a few hours beforehand and can be enjoyed on its own or with food.

Vineyards: a 1.5ha vineyard cultivated according to organic cultivation methods this is well exposed and ventilated on the crest of hill, where the vines bear fruit with difficulty due to the harshness of the soil, a mixture of sands and marl, that result in fruit with a particular concentration and character
Yield: 35HL/ha
Soil: sandy soils with lots of marl

Harvest: manual harvest in the last week of October
Fermentation: cold maceration before slow fermentation with only natural yeasts; initially in small stainless steel tanks and then in cement vats always following a special routine of pump overs and punch downs
Ageing: in contact with its lees in both stainless steel tanks and cement
Refining: 3 months of bottle refinement before market release

Alcohol: 14.5%

Color: intense yellow with light green reflexes
Nose: ample and intense with spices and toasted almost notes
