Vineyards: Guyot-trained vines planted in 1986 and cultivated according to organic cultivation methods
Soil:medium textured, prevalence of sand and clay

Harvest: manual harvest in boxes at the end of August
Fermentation: must obtained from the Pinot Grigio is left overnight to decant in a steel vat. Once decanted, it is used as a “pied de cuve” to which the Chardonnay must is added at a later stage with subsequent racking. Fermentation takes place solely with indigenous yeasts inside a steel vat
Ageing: at least 7 months in stainless steel vats
Refining: short bottle refinement before market release
Alcohol: 13.5% vol.
Color: intense straw yellow
