Ares represents the excellence of the Palagione winery and is a pure Merlot, a modern wine that is in line with the current gastronomic demands, capable of combining qualities of finesse, elegance and smoothness with sensations of endless freshness and drinking pleasure. A balanced, harmonic and almost feminine wine, suffused by a very pleasant ability to warm and envelope the palate.

Harvest: manual harvest in September with a careful selection of only the best grapes
Fermentation: delicate destemming and crushing of the bunches followed by alcoholic fermentation follows with frequent but delicate pumping overs and delestages. About 20 days of maceration on the skins in small stainless steel tanks followed by French oak barrels to conclude the malolactic fermentation
Ageing: 24 months in French oak barrique barrels
Refining: at least 9 months of bottle refinement before market release
Alcohol: 14%
Color: dark and intense ruby red
Nose: conveys an extravagant complexity of ripe fruit; blackberry, blueberry and myrtle with vegetable and balsamic notes that are the typical Mediterranean herbs and finally chocolate, coffee and tobacco.
